Chicken Hariyali Kebab

A kebab sounds just right for the Friday night, right? And trust me, you don’t need to order from a restaurant. These are very easy to make at home as well.

So try this for a Friday night in or over the weekend and enjoy.

INGREDIENTS

  • 2 chicken breasts, boneless
  • 1 cup coriander leaves
  • 2 medium onions
  • 2 tbsp curd or yogurt
  • 1 green chill
  • 1 tbsp red chilli powder
  • 1 tbsp cumin powder
  • 1 tsp coriander powder
  • 1 tbsp red chilli powder
  • 1 tbsp garam masala powder
  • 1 tbsp ginger garlic paste
  • Salt to taste
  • Skewers

METHOD

  1. In the mixer, add coriander leaves, green chilli, yogurt and ginger and garlic to make a smooth paste.
  2. Take it out in a clean large bowl. Cut the chicken breasts in cubes and add to the mix.
  3. Add all the spices to the bowl and mix it well. Ensure all the chicken pieces are coated in the marinate well.
  4. Place the bowl in the fridge for atleast 30 minutes.
  5. If you are using wooden skewers like me, allow the skewers to soak in water for 30 minutes. This is to prevent them from burning.
  6. Cut the onions in cubes so that you can insert them in the skewers
  7. Once the chicken is marinated for 30 minutes, take them out and place them in a plate. Mix the onion pieces with the marinate well.
  8. Then insert the chicken and onion pieces in the skewer. I place them alternately. Allow some space between them so that it can cook quickly.
  9. Drizzle some oil on the grill and once the grill is hot place the skewers on the grill. I use a large sandwich grill for this and it works perfectly.
  10. If you don’t have a grill, you can simply cook them on a pan as well.
  11. If cooking on grill, let it cook from all sides till it gets nicely charred. Occasionally brush with some oils if it looks dry.
  12. Serve with some mint coriander chutney and salad.
