A kebab sounds just right for the Friday night, right? And trust me, you don’t need to order from a restaurant. These are very easy to make at home as well.
So try this for a Friday night in or over the weekend and enjoy.
INGREDIENTS
- 2 chicken breasts, boneless
- 1 cup coriander leaves
- 2 medium onions
- 2 tbsp curd or yogurt
- 1 green chill
- 1 tbsp red chilli powder
- 1 tbsp cumin powder
- 1 tsp coriander powder
- 1 tbsp red chilli powder
- 1 tbsp garam masala powder
- 1 tbsp ginger garlic paste
- Salt to taste
- Skewers
METHOD
- In the mixer, add coriander leaves, green chilli, yogurt and ginger and garlic to make a smooth paste.
- Take it out in a clean large bowl. Cut the chicken breasts in cubes and add to the mix.
- Add all the spices to the bowl and mix it well. Ensure all the chicken pieces are coated in the marinate well.
- Place the bowl in the fridge for atleast 30 minutes.
- If you are using wooden skewers like me, allow the skewers to soak in water for 30 minutes. This is to prevent them from burning.
- Cut the onions in cubes so that you can insert them in the skewers
- Once the chicken is marinated for 30 minutes, take them out and place them in a plate. Mix the onion pieces with the marinate well.
- Then insert the chicken and onion pieces in the skewer. I place them alternately. Allow some space between them so that it can cook quickly.
- Drizzle some oil on the grill and once the grill is hot place the skewers on the grill. I use a large sandwich grill for this and it works perfectly.
- If you don’t have a grill, you can simply cook them on a pan as well.
- If cooking on grill, let it cook from all sides till it gets nicely charred. Occasionally brush with some oils if it looks dry.
- Serve with some mint coriander chutney and salad.
